  1. Add the water to a saucepan and bring to a boil.
  2. Remove from heat and stir in sugar and add in the tea. Let it steep until the water cools (even if it takes a few hours). Use an ice bath if you have less time.
  3. Strain the mixture and add in the starter tea
  4. Transfer the mixture to a one-gallon glass jar and carefully add in the SCOBY.
  5. Secure the top of the jar with layers of tightly woven cloth, paper towels, or coffee filters
  6. Let the fermentation occur for 7 to 10 days. Make sure the jar is at room temperature but away from direct sunlight.
  7. A new SCOBY will form in Kombucha. After seven days, taste the tea every day until the flavor is at a balance you like. The more it ferments, the tartier it will be.
  8. Remove the SCOBY and transfer the Kombucha to bottles. Strain it if you do not want any particles floating around. You may add some herbs, fruits, or anything else for additional flavor. You can also keep some tea aside from this as starter tea for your next batch.
  9. Keep your Kombucha tea at room temperature for 1 to 3 days to allow carbonation to occur. Once done, store it in the refrigerator to prevent more carbonation and fermentation.
